I understand Views can be added to select show calendars - is there also a way that it can be set up like categories (when the Category NAV is enabled), that any available calendar can be clicked on an overlapped by the user and not as a predefined view? Similiar to how Google handles it with the checkboxes

No, I'm sorry. Calendars can not be filtered in this way.
